Homemade Marshmallows

One of the best treats I love to enjoy during the winter is hot chocolate.  Add marshmallows to the mix and I'm a happy girl! I always make my own hot chocolate from scratch because what comes in the packets or containers is loaded with sugar and strange ingredients, and mine just tastes better anyway.  Then yesterday I decided to take it a step further and make my own marshmallows without any icky chemicals.  The whole process was really easy and they came out beautifully.  A little sweet for my liking, but omitting the stevia from the hot chocolate would balance them out nicely.  I'll definitely be making these again so perhaps next time I'll swap out some of the sugar .  I've already been dreaming up the next flavours I want to make; lavender, coconut, mint, chocolate, chocolate mint...mmm!

For a the adults, feel free to add a shot of Kaluha or Bailey's, or whatever your heart desires...

I then made a kid friendly version for the kiddos. 

For the Marshmallows, I used this recipe

Hot Chocolate
- 1/2 cup Coconut milk
- 1/2 cup water 
- 1 tsp unsweetened cocoa powder 
- 1 packet of Stevia (omit if you don't want it too sweet when adding marshmallows and/or liquor)

In a sauce pan, bring coconut milk and water to a boil.  Stir in cocoa powder and stevia.
Pour into a mug and add you're toppings.
